My friends Lydia and Chris are my favorite vegetarian couple and they always make the yummiest vegetarian dishes ever! They brought a dish like this to a party we went to and immediately I fell in love! Super simple fresh ingredients tossed together in a light balsamic vinaigrette. So refreshing for the summer!
I like making my own vinaigrette for two reasons: 1. You know exactly what's going in it and 2. you can adjust it to your taste. Some times I find store bought just a little too tangy or a little too sweet, never to my liking.
Toss and serve!
Recipe:
2 large beefsteak tomatoes
2 medium avocados
1 small red onion
Balsamic Vinaigrette Dressing adapted from Emeril Lagasse
- 1/4 cup balsamic vinegar
- 2 teaspoons dark brown sugar
- 1 tablespoon chopped garlic
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup olive oil
DIRECTIONS
Chop the Tomatoes and avocados into similar size pieces. Slice the red onion and place in large bowl with the tomatoes and avocados. in a separate bowl b
eat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.
Toss all ingredients together and serve!
